What is Bottle Masala?

If you thought garam masala was a handful, with seven spices to remember, think again!

Bottle masala or the East Indian bottle masala is a traditional masala made from a blend of almost 30 spices including the rare dagadphool or stone flower. Every East Indian family has their own version of bottle masala to use in our traditional recipes and the recipe is a closely guarded secret.

Time-consuming to make but totally worth the taste, some of the ingredients include dried kashmiri red chilies or bedgi chilies, grains of wheat, turmeric (haldi), cumin (jeera), caraway seeds (shahi jeera), coriander (dhaniya), sesame seeds (white til), cinnamon stick (dalchini), big and small cardamom (badi and choti elaichi), mugwort (maipatri), bengal gram (chana dal), fenugreek seeds (methi), asofoetida (hing), bayleaves (tejpata), star anise (badiya), poppy seeds (khuskhus), cloves (lavang), peppercorns (kalimiri), mace (javitri), mustard seeds (rai), nutmeg (jaifal), teppal (tirphal), fennel (saunf), saffroncobra (nagkesar), allspice (kabab chini), saffron (kesar), and the all important stoneflower (dagdaphool).

Why is it called Bottle Masala?

The traditional East Indian masala is called bottle masala because once it’s been through the painstaking process of making it, it’s stored in old beer bottles. It has been since my parents and grandparents’ time. And hence the name, bottle masala.
