This chicken frithad curry is a light red curry made with aromatic spices such as cumin, coriander, cardamom, cinnamom, cloves and more. The addition of bay leaves, ground coconut, sesame and poppy seeds give it more flavor and depth. A traditional East Indian Mumbaikar curry, it’s made regularly in our kitchen. Here’s the recipe for the frithad followed by pics showing steps of how to make it. If you prefer, you can make this curry with beef too. We also use almost the same masala for our meatball curry.

Chicken Frithad Curry – Aromatic Spicy Red Masala Curry

Ingredients
- 1 Kilograms Chicken
- 2 Potatoes
- 1 Litre Water
- 1 Tablespoon Tamarind Pulp
- 2 Onions
- 2 Tablespoons Ghee (Indian clarified butter)
For the Masala
- 10 Dried Red Chillies
- 4 Bay Leaves
- 2 teaspoons Coriander Seeds
- 1 teaspoon Turmeric Powder
- 3 Inches Cinnamon Sticks (Dalchini)
- 2 teaspoons White Sesame Seeds (Til)
- 6 Cloves (Lavang)
- 0.25 Copra or Dried Coconut
- 12 Garlic Cloves or Garlic Flakes
- 1 teaspoon Khus-Khus (Poppy Seeds)
- 1 teaspoon Jeera (Cumin Seeds)
- 0.5 teaspoon Black Peppercorns
- 3 Pods Cardamom
Instructions
- Soak the tamarind in water and keep ready.
- Roast the copra (sun-dried coconut) on a flame and then grate fine. If you don’t have a stove with an open flame roast on a tawa or in the oven.
- Grind all the masala ingredients together and set aside.
- Cut the potatoes into eight quarters each (cubes).
- Slice the onions fine and fry them in ghee until soft.
- Now add the ground masala and fry for about 5 minutes.
- Add the chicken and potatoes and cook for 10 minutes.
- Lastly, add in the tamarind juice, bay leaves and salt, and allow to simmer till done.
