The base for these gluten free homemade apple cookies is similar to one I use for my open apple pie cookies – but instead of using all-purpose flour and semolina with the apple mix, I use mix of a cornmeal dough and apple halwa. You could use an apple jam too, but try to use one with a lot of texture that complements the cornmeal as much as the apple halwa does.
The steps are pretty simple. Mix everything together, roll into a log and bake. No need to freeze or wait! Follow the pics below my recipe below. Enjoy! 🙂

Sarah’s Glutenfree Apple Cookies with Cornmeal

Ingredients
Cookie dough
- 300 grams Cornmeal
- 125 grams Ghee Add more if required
- 100 grams Sugar Powdered
- 1 Egg
- 10 ml Vanilla Essence
- 1.5 teaspoon Baking Powder
Apple Halwa or Apple Pie Mixture
- 3 Apples
- 2 Tablespoon Ghee (Indian clarified butter)
- 40 grams Sugar
- 1 teaspoon Cinnamon Powder (Dalchini)
Instructions
Cookie Dough
- Mix the cornmeal, baking powder, and powdered sugar together.
- Add in the ghee, vanilla essence (optional), and egg and mix well.
- Knead the dough into a ball and it's ready to use.
- If you want to make ahead and keep, you can refrigerate this overnight or for just an hour depending on how your time allows, but it's not essential.
Prepare the Apple Halwa Mixture
- Wash and grate the apples. In a vessel, add ghee and allow it to heat.
- Add in the grated apples and then add the sugar and cinnamon powder.
- Mix and stir occasionally to dry up the water that the apples release.
- Stir until quite dry and the apple halwa or apple pie filling is ready.
Assemble The Cookies
- Add the apple mixture to the cookie dough and roll into a log.
- Cut into circles, but since the dough has not been frozen, it's quite soft and turns into half-moon shapes naturally.
- Place the half-moon shapes on a lined baking tray and place in the oven.
- Bake in an oven for 20 mins at 200 degrees Celsius or 390 degrees Fahrenheit.
- Once done, allow to cool for a while before serving.

Notes
- We do not refrigerate this though. Only refrigerate if you want to make ahead and save it to use another day.
- You can make these cookies at any time of the year and can change the shape depending on your theme.
- Once the apples are grated, use them immediately so they don’t turn brown.
