My family loves offal! In all it’s forms! From the time-consuming corned tongue to the simple and easy chicken gizzard stir fry, offal is consumed in our home quite often.

What is offal? It’s the parts of an animal that are usually discarded and considered inedible by some cultures. However, if you step over into our East Indian culture and quite a few other cultures, you’ll find that these entrails or internal organs such as livers, hearts, kidneys, sweetbreads, tripe, brains, tongues, lungs, udders, and intestines are considered a delicacy. From using the intestines as casing for sausages to frying the brains into cutlets or spicy brain curries to eating deep fried or grilled udders, here are some tasty recipes made with offal meat.
